Naturally Leavened Dough
Our pizzas are made in the old world style where the dough is leavened over several days using a naturally occurring process. The dough is made with organic flour, water, and sea salt… that’s it! Without added commercial yeast, our dough is easier to digest, more tolerable to those with gluten sensitivities, and has an added depth of flavor.
We make naturally leavened focaccia and ciabatta breads, as well as savory pastries, right in-house. Other breads are available through partnerships with local providers who share our passion for small batch foods.
Hand Crafted Pasta
All pastas served at Fiorella are made using organic semolina and water. This traditional recipe is completely vegan, and our pasta dishes are prepared using simple seasonal ingredients.
Carefully Selected Cheeses
Whether sourced from the abundant Finger Lakes region of New York, or imported Italian specialties, our cheeses are guaranteed to be of the highest quality.
The chicken, pork, and beef we serve comes directly from farms in the Finger Lakes region, and our salumi is locally cured.

House Made Gelato
Made with cream from local dairies, our rotating offering of gelato is constantly fresh and updated regularly. We also offer dairy-free sorbet.
